Rule 21
OBJECTIVES TO BE FOLLOWED BY FOOD SELLER

(1) Any vessel used for storing, preparing or transporting food or the place where such food is kept shall be as follows:-
(a) clean, neat and unbroken or in good repair,
(b) If the enamel (tanchin) or tin ring is filled, the ring is not chipped or blown,
(c) properly tarred or properly covered to protect against dust, dirt, flies, vermin, termites, and
(d) kept in a place where there is no contact with foul odors, dirt, contaminated air or water.
(2) Foodstuffs kept under the following conditions will be considered harmful to health:-
(a) Behavior of rusted iron vessels,
(b) Enamel (Tanchin) vessels are chipped or rusted,
(c) of tinned copper or brass, and
(d) Leaded aluminium.
(3) Notwithstanding anything written in sub-rules (1) and (2), unplated copper and brass vessels may also be used for preparing and keeping sugar syrup, sweets and oil.
